Cucumber and Cream Cheese Sandwiches
A super simple but always popular recipe. It’s great for an afternoon tea, for something easy, but a little bit fancy pants.
1 large cucumber
1 tablespoon of fresh dill
½ tablespoon of fresh lemon juice
dairy free cream cheese
salt/pepper to taste
8 slices of fresh bread
Wash & dry the cucumber. Cut it into sections that are the same length as the bread. Then cut those sections into very thin slices. You need enough slices to have one layer of cucumber for each sandwich. Probably 2 slices per sandwich will be enough, depending on the width of the slices. Lay the cucumber slices onto draining paper and set aside while you prepare everything else. Put any leftover cucumber aside for another recipe.

Whole Wheat Bread – 1 loaf
1 stick Butter (softened)
16 ozs finely grated Cheddar Cheese
1 tsp Yellow Mustard
Dash of pepper
Christmas shape cookie cutters
Mix butter, cheese, and mustard together. Spread on one slice of bread and cover with another. Carefully out different shapes with cookie cutters.
*Amount varies depending on size of cookie cutters. Aim for medium sized bites. Avoid peanut butter sandwiches for allergy reasons.
**Can use either finely sliced ham or turkey in place of cheese.
Cream Cheese and Cucumber Sandwiches
Whipped Cream Cheese (8 oz)
1 Cucumber, thinly sliced (and dried on paper towel to drain excess water)
1 loaf French Sourdough Baguette (sliced)
Finely chopped Cilantro or Parsley
Spread cream cheese on sliced piece of bread. Place sliced cucumber on it. Top with a dash or cilantro or parsley.
